Time for a new great recipe on this lazy Sunday. Today I’ll share my lentil Dahl recipe with you. One of my favourite vegan recipes.
200 gram red lentils
3 garlic cloves
1 tablespoon ginger bowls, rasped
1 teaspoon cumin powder
1 teaspoon turmeric powder
1 teaspoon cayenne pepper
250 ml coconut milk
400 gram chopped tomatoes
salt (to taste)
Optional: rasped coconut for garnish
To eat it with:
A type of salad that you like (I like to make use of something from my garden)
How to make it:
You cook the lentils as instructed on its package.
While the lentils are cooking you put some oil in a pan and you bake the onions until they are glassy. Then you add the ginger and after a few minutes also the cumin powder, turmeric and cayenne pepper. After that you add the chopped tomatoes and coconut milk and bring it to boiling temperature. When it is boiling you add the lentils to it and you add some salt to give it the right taste.
Serve the Lentil Dahl with rice, salad and if you want to some rasped coconut.
This dish is also ideal for freezing so you can make a large amount at once.
