Super duper healthy banana bread!


Banana bread, a type of bread that comes in many shapes and forms. I made up my own version without any animal products, just because it can, without giving in on taste! I am giving you the basic recipe but you still can give it your own twist by adding nuts, chocolate or dried fruits.

100 gram spelt flour
50 gram almond flour
1,5 teaspoon baking powder
1 teaspoon bicarbonate of soda
1 teaspoon cinnamon
a pinch of salt
3 ripe bananas
2 teaspoons lemon juice
1 teaspoon vanilla extract
2 tablespoons chiaseeds
1 tablespoon ground linseeds

How to make it:
The chiaseeds and linseeds will replace eggs and you will prepare them first. You combine the chiaseeds with with 8 tablespoons of warm water (equal to two eggs). In another bowl you combine the linseeds with 3 to 4 tablespoons of warm water. You stir them and leave them for about 10 minutes.

While waiting for the ‘eggs’  to get ready you combine all dry products in a bowl. In another bowl you mash the bananas. Put the chiaseeds in the blender. After that you add them to the mashed bananas with the flaxseed paste. Also add the lemon juice to it. Whisk it together and when it is mixed well, add the dry ingredients to it.

Turn on the oven at 170 degrees. Grease the baking tray and put the batter in the baking tray. Put the banana bread in the oven for around 35 to 40 minutes.
