Most people think that you need eggs to make a delicious chocolate mousse because that’s the only thing that can make it airy. Luckily there is a great alternative which makes it possible to make a chocolate mousse without any animal products!
– 150 grams of 75% cacao chocolate bars
– 180 grams aqua faba (that is the amount of liquid in one can of chickpeas)
– 100 grams sugar
– 1 teaspoon lemonjuice
– 2,5 gr. vanilla powder
– 1 teaspoon Cointreau (you can also use another liquor like Grand Marnier)
How to make it:
Melt the chocolate au-bain-marie. While the chocolate is melting, mix the aqua faba and lemon juice and whisk it for at least 10 minutes. There should be a comparable effect as when whisking egg whites. If you are able to turn the bowl upside down without the aqua faba coming out you can start adding the sugar bit by bit. While you keep whisking you also add the vanilla powder.
Now you can add the melted chocolate and scoop it through with a spatula. If it is mixed well you can put the chocolate mousse in the crockery you want to serve it in. Put it in the fridge for an hour our two so it becomes a bit more stiff. After that it is ready to serve! So ideal when you have people coming over for dinner. You can prepare it before they arrive!
